Core food label requirements to review before U.S. sale

A useful food label review starts with the exact recipe, processing method, package, intended market, and claims. It then connects those facts to the correct regulator and final artwork. A field appearing on the package does not establish that its wording, calculation, placement, prominence, or exemption is correct.

Why this review needs product evidence

Food labels are systems rather than isolated panels. The statement of identity and net quantity affect the principal display panel; the formula drives the ingredient and allergen declarations; the serving basis drives Nutrition Facts; and claims can change which supporting records are needed. Imported products also need the same U.S. label review plus separate import and facility checks.

Recommended review sequence

  1. Classify the product and confirm whether FDA, USDA FSIS, or another authority controls the specific article.
  2. Freeze the recipe, sub-ingredients, processing aids, flavors, colors, and supplier specifications used for the released lot.
  3. Review the principal display panel for identity and net quantity using the actual package dimensions.
  4. Recalculate Nutrition Facts from the final formulation, serving basis, rounding rules, and current format requirements.
  5. Reconcile ingredients and major allergens to the complete formula, including ingredients inside compound ingredients.
  6. Review business details, country-of-origin questions, storage statements, directions, and every claim-bearing surface.

Evidence to keep with the released label

Keep one versioned packet containing the formula, supplier specifications, allergen matrix, nutrition calculation, laboratory support where used, package dimensions, final-size artwork, claims substantiation, business-role records, and jurisdiction decision. Record which source and section supported each material decision. Reopen the affected checks after a recipe, supplier, serving, package, business, or claim change.

What the pre-check cannot prove

Common failures include reviewing a flat proof without package dimensions, copying Nutrition Facts from a similar SKU, omitting allergens inside sub-ingredients, treating a supplier trade name as an ingredient name, and assuming a marketplace title is outside label review. Unreadable panels and missing evidence should remain unresolved rather than being converted into a pass.

Automatic extraction is accepted only when required text is present in two OCR passes, image quality and layout evidence meet the configured threshold, and the submitted product facts agree with the recognized text. Otherwise the upload is rejected for clearer, complete panels. This does not establish population-wide OCR accuracy or regulatory compliance.
